NatEnzyme Biscuit Plus 2040 is recommended for the production of flours for exclusive biscuit use, where it is necessary a reduction of the alveographic W value. According to the different type of flour used, with a dosage of 30 gr/100 kg it lowers the W value of 130 points on average. The product can be used up to a maximum of 40 gr/100 kg and it is fundamental for the production of wafers, crackers, wafer for cornets, etc. It is absolutely not recommended for the production of bread and oven leavened products in general.
